Favorite SmoothieJune 23, 2010

One of my best friends in the world introduced me to this delightful sludgy mess of a meal.  I was sick as a dog one summer and could hardly stomach a cracker without tossing my – I’ll spare the details.  Anyway, she came to visit to help me feel better and this drink made her go from BFF status to savior extraordinaire in an instant.

All you need is a blender and the patience to handle 5 minutes digging around the produce section for these ingredients:

-a few handfuls of spinach

-1 apple

-a handful of baby carrots

-a few cherry or grape tomatoes

-1 banana

-5 strawberries

-2 cups of apple juice

Put all ingredients in a blender (core the apple, take the stems off the strawberries, peel the banana) and blend on high for at least a minute until you have a nice, green, Shrek-like mass of goodness.  If you’re having trouble getting it all to blend, just pour a little more apple juice in.  Although it looks very gross, it tastes delicious, like a fresh watery apple sauce.   The best part is you get in an amazing amount of fruits and vegetables early in the morning.

Keep in mind, this smoothie is nicknamed the “Roto Rooter” so it’s great for regularity.  If you aren’t so used to ingesting lots of raw fruits and veggies make sure you’re prepared and know that it’s a normal process.  Enjoy!  Your body will thank you.

This is probably a coincidence, but I can’t help but feel special that you posted this smoothie on my birthday. I’m going to try it this week!
