Lollipop Lollipop Oh Lolly Lolly LollyJuly 23, 2010

So we’re not technically making lollipops here, but I do consider popsicles the official candy of summer. For weeks now my fellow fit-twits have been putting up with my plentiful (and unsolicited) rants about my chilly food cravings. And although there are plenty fine ready made products to choose from out there, I thought it would be a great idea to give homemade popsicle-making a go for health conscious, wallet conscious, and eco-conscious reasons.

Rinse a large container of blackberries. Organic is best, but you'll live to see another day if you buy regular.

Rinse and cut the tops off of a bunch of strawberries.

You'll need a blender

Grab a handful of the blackberries (do your best not to eat all of them before they hit the blender)

Now the strawberries. It always helps to put the softest food in the blender first so the blades can puree it and then suck the food on top down faster.

Make sure the lid is sealed extra tight. Especially when dealing with stain-happy berries

Blend to a nice thick but pourable consistency. Add a bit of water to help get started (no more than 1/3 cup or you'll have to use way too much sweetener)

Agave nectar is a healthy alternative to sugar, and blends effortlessly. I got mine from Whole Foods.

Don't be shy with it - especially with such a large amount of berries.

after blending the agave in, be sure to taste it to make sure it's not too tart

Pull out the popsicle molds. I got these from Target in their seasonal clearance bin for 75 cents. Seriously.

A little messy pouring straight from the blender...

Oh well, messy is kind of fun

And there you have it. Tasty little frozen goodness.

I’m excited about venturing into this new world of homemade frozen pops, but I wanted to step lightly at first. When I looked up popsicle molds online they were expensive ($15) and huge. I didn’t want my first batch to turn out horribly and be left with a massive amount of frozen failure to waste. I’m excited to see how these go and may end up making more as this heat wave slowly burns it’s way through late summer.

Isn’t it amazing that just berries and a little sweetener can make such a delicious snack? What brand of popsicle molds did you use? We had to wrestle with the cheap Target ones I bought for this recipe, so I’m in the market for better ones now.
