Boy meets girl. Girl falls for boy. Boy loves meat. Girl does not.

Never in a million years would I think that I would be whipping up meat dishes until I met my one and only. I was perfectly fine chopping raw veggies and marinating tofu to my heart’s content. But then I realized the joy in creating nourishing food for people I love, no matter what their dietary limitations or um, (in this case) expansions.

I have always heard that buffalo meat is much better for you than beef so this summer I have been trying to weave it into my boyfriend’s dinners in order to keep him nice and healthy. It has more protein, but less fat and cholesterol than beef. Add in the fact that beef is constantly getting recalled for E. Coli and you have the perfect solution: buffalo!

I would lie if I told you this solution doesn’t come with a few challenges. #1, it’s rather difficult to find, #2, it’s expensive. I bought 1 pound for about $7 at Whole Foods, but the look on his face when he eats these totally makes up for it.

Take 1 pound of buffalo meat and place it in a mixing bowl

Now take 1 onion

Chop into chunks

Put in 1/2 cup of the chopped onions. 1/4 cup is fine too - I just try to cram as many veggies as I can get into dishes for my beloved carnivore

1 teaspoon of brown sugar

1 Tablespoon of Worcestershire sauce

A few flicks of Tabasco sauce. I don't really know how else to measure this stuff. Just flick it in.

Extra bonus ingredient: a few drops of Liquid Smoke. It's made by Colgin and it's a great secret weapon for lots of meat and fish dishes.

After you've thoroughly mixed all the ingredients together with a spoon or your hands, heat about 2 teaspoons (not a lot) of oil in a saute pan on high heat for about 3-5 minutes.

Reduce heat to medium/high and place the pretty little patties into pan. Brown on both sides.

Voila. I added some provolone cheese to these for an extra touch. Enjoy!

    Fortunately, my love has the same diet as me. I also try to creatively find ways to sneak as much vegetables into a meal. Good meat (without the growth hormones, from small farmers, etc.) is very expensive, so I usually treat meat from an Asian perspective: use it as flavoring. He still loves the dishes I prepare, without knowing how much less meat he’s eating. Although, when I do a meaty dish… he still devours it like crazy.

    I agree that Buffalo is much better to use than beef!! I need to make this for my hubby!! I love the intro, it describes Michael and I to a T! When we met I was a pescatarian and he too me to Capital Grill on our first date! He tried all night to get me to try his fillet..haha
