His and Hers ChiliJanuary 20, 2011

I have been craving chili all winter long, but up until now, I hadn’t got around to making it. Most of this was due to the fact that I feared wasting the majority of the pot on a picky carnivore who happens to share his meals with yours truly. I’m happy to state that in the throes of one of my most recent cravings for chili, I came up with a solution that calmed my fear and left both of us happy and satisfied.

Begin with four 15 oz. cans of organic beans. I like to mix and match mine, so I got a healthy mix of pinto, kidney, northern, and aduki beans for this batch of chili. If you're less adventurous, just stick to black and kidney. This can of Eden Organic beans has a BPA free label that lets you know the packaging is safe.

Time to wield one of my little-used kitchen weapons

I love cracking open a can and getting that first glimpse of the treasure inside

After opening all of your cans, take out a large onion and place it on a cutting board

Chop away

Action shot: pour 1-2 tablespoons of olive oil into a large soup pot and heat it on a medium/high burner

Plop in the chopped onions and let them saute away in the bottom of the pot for 3-5 minutes while stirring consistently so they don't burn

Take out a pound or two of freshly ground turkey. I'm using organic, which is super expensive, but a bit cheaper if you opt for ground turkey leg instead of ground turkey breast. Try it.

Drop about a tablespoon of olive oil in a skillet heated on a medium-high burner

Keep it moving so it doesn't burn. Sorry about the Michael Jackson hand.

Turn the burner down a bit on the turkey if you need to. You want to keep it just warm and let it barely simmer while you get together the chili spices.

Begin to dump your open cans into the soup pot after the onions have barely browned. I began with those four cans of beans I mentioned earlier, then I added six 14 oz. cans of Muir Glen Organic fire roasted diced tomatoes. I bought both the beans and the tomatoes from Whole Foods. Big surprise.

Now run over to your computer and use your top secret weapon that no one is supposed to know about. I love allrecipes.com because they have yet to fail me. I used their chili spice combination for this recipe and it was very good. You can find the link at the bottom of the post.

Mixing all the spices up

Scoop out a tablespoon of the mix and sprinkle it in with the ground turkey

Slide the remaining spices into the simmering pot of onions, beans, and tomatoes.

One of the final touches that I enjoy most is adding a whole bag of frozen sweet corn to the pot. The sweetness mixed with the heat of the spices is delicious.

Reality check: cooking in my jammies in a very messy kitchen

Stir in the frozen corn. It'll heat up in no time.

Last touch, chop chop

His and Hers chili. Now we're both happy. plain chili for me, spicy ground turkey added for him. I stored the ground turkey in a separate container so he can add it to his bowl whenever he wants some.

    I never think to add corn to my chili. I usually do red and black beans. I like the different textures from different beans too. I am a “make it up as I go” cook LOL

    That’s awesome! Buying dry beans is so much cheaper though! My freezer is full of beans and I don’t even buy cans anymore. Looks super delish!

    Both bowls look quite tasty! What are aduki beans? I’ve never heard of them before but curious now as I’m slowly entering the world of beans.

    I am equal opportunity-I like recipes from cookbooks, online, magazines, friends, etc. I just wish there was a better way to keep them in order. I feel like a hoarder sometimes b/c of all my cooking magazines so I’ve been trying to tear out the ones I’m interested in.

    So smart to make him his own little container of turkey to add to meals! Jonathan has gotten to where he doesn’t really care about having meat, but there was a time in our life when that would have been the best idea ever!

    I absolutely love AllRecipes.com. I use it all the time! And I agree, they have yet to fail me either.
    As for the chili, I’m in love. Thanks for your little tutorial! I can almost taste it….. The only thing about chili is that I have to make it without onion and garlic, which are two HUGELY important ingredients in chili (they both give me bloating and gas). It’s really such a bummer!

    allrecipes.com is so great! I actually omitted the garlic in this recipe, and the onion I used wasn’t even enough to make the much of a difference in the overall taste of the chili, so I say just try making it without it!

    I am thoroughly enjoying your blog and thanking Ms. Tai Beau for the e-introduction. Do you eat soy? My husband doesn’t eat meat and we use TVP (textured vegetable protein) for our chili. It takes the place of the meat and is so good.
