Ice Cream “Wednesdae”January 25, 2011

I have always been way too literal for my own good. When I was very young, I thought that “skinny” meant the person had extra skin hidden somewhere on their person. I assumed that anyone with the last name “Short” was actually short, and that soccer was meant to be played in socks. So it’s no surprise that I used to make milkshakes at home by shaking up milk in a closed container and pouring it into a glass, and was sure it was illegal to eat ice cream sundaes on any day other than its namesake. Thank goodness I’m a tad bit wiser now.

Let's begin with a lovely little sack of nuts, shall we?

Spread them evenly on a foil-lined cookie pan and pop in the oven at 350 degrees for no more than 10 minutes. You want them browned, not blackened.

After taking them out of the oven, dust them evenly with a tiny bit of sea salt.

Now take out all of your stresses from Monday and Tuesday by putting the freshly roasted and salted pecans in a Ziploc bag and crushing them with the heel of your hand. Then set them aside to start phase 2.

Take 2 small glasses and an ice cream scoop

Scoop. I'm using Alden's Organic Vanilla ice cream. Set aside to execute phase 3.

Find the best solid chocolate you can and fill an average-sized mug about 3/4 full.

This is so easy. Pop the mug into the microwave on high for only about 45 seconds to a minute. The time in the photo is the actual time on the clock, not the cook time. Don't turn your back on your chocolate when it's heating up. It needs your watchful eye to avoid burning. You want it to be barely melting.

Take it out and stir it around until it looks similar to this.

Whoa.

the end.

You may be wondering why in the world I would feature such decadence on a healthy living site. I think it’s important to indulge sometimes, and it helps a ton to limit the amount of preservatives/chemicals to make dishes with the purest ingredients. Sure you could buy hot fudge in a jar from the grocery store, but if you peek at the ingredients, I’ll bet my bottom dollar you’ll find more there than cocoa, butter, and sugar. Ditto on the ice cream in a tub. Given, this dish isn’t something you want to dive into often, but taking the time for the small details like making your own roasted pecan topping helps you savor what’s in front of you so much more. And I’m almost positive it’s what empowers me to stay away from less quality sweets. Just food for thought…

QUESTION: Do you have any strange quirks about you that were even more pronounced as a child?

This isn’t really a quirk – but it defined me later I suppose. I was a SUPER picky eater as a kid – wouldn’t eat meat, but loved my veggies ;-)

“When I was very young, I thought that “skinny” meant the person had extra skin hidden somewhere on their person.” that is GREAT! It’s refreshing actually, that you did not know what “skinny” meant in the term people use it.

I have had that ice cream before. It’s good. Your toppings look amazing!!!

Joslyn yay!! i have internet again!! :) looking forward to catching up with you! :)

and i totally agree, indulging once in a while is part of a healthy lifestyle. if you didn’t, you’d probably go nuts. (i know, i would.) this post made me think of a “food rule” by Michael Pollan: eat junk food, but only if you make it yourself. you know what goes in it, plus it’s almost always more healthy. your food probably has a shelf life as opposed to some of the store bought stuff. :P

Ha, that looks so GOOOOOOD! Probably because I am going off sugar 100% for a couple weeks. After Christmas I feel my body FREAKING out. It really needs a detox. You on the other hand did not indulge for some time preparing for your awesome yoga event! Since I want to lick the screen I think it is safe to say I have NOT curbed this craving yet…

Okay well now I just feel plain evil! My bad! I promise to feature a sugarless dish next!
