So this past week I was faced with a serious dose of reality. Several projects I’ve been working on are converging all at once into something that is but one step from the Bermuda Triangle. I have let myself get sucked into this lovely little trio of sleepless nights, hard work, and incessant experimentation, and because of it, my healthy routines have fallen by the wayside. But instead of beating myself up, I like to think that these kinds of events are really just a testiment to the fact that we all get a little off-kilter and unbalanced when it comes to healthy living and exercise. What really is the important part is righting the ship as soon as it feels a bit too off balance. I find a good poached egg recipe always does the trick when I’m feeling particularly under-nourished and in need of a good clean dose of health.

Simmer 2 inches of water in a shallow saucepan. Then add a splash (1-2 teaspoons) of white vinegar

crack 2 eggs and carefully drop them into the simmering water/vinegar mixture. Gently spoon the water over the top of the eggs to help them cook.

After about 3 minutes, take out the eggs with a slotted spoon and gently place them on a napkin.

Now take a few handfuls of spinach and place them in a skillet with 1-2 teaspoons of olive oil in the pan. Toss around for just about a minute - you want them just barely sauteed.

Slice a nice little bright lemon in two.

squeeze the juice of half a lemon of top of your spinach with just a dash of salt for taste. Delicious and simple flavor combination.

Gently place your poached eggs on top of the spinach. Add a delicate dusting of peppper.

Whoa. Trippy-good.

Drinking a nice healthy smoothie in the car to wash it all down. My body's feeling better already!

Your Healthiest Life: I am strong believer in balance. But that doesn’t mean that we always can afford to have it in our lives. It’s only natural to be pulled in directions that don’t necessarily facilitate our workout plans: carpooling children, large work projects, and family emergencies that last for months are a few examples of exercise-repellers. But just because you missed 6 months of Zumba doesn’t mean you should punish yourself by gorging on Twizzlers and missing it another day. Realize that there is a time and a place for everything. Be gentle and kind to yourself – don’t punish your body because you may have got thrown off track for a moment! Life will be a see-saw of challenges and adjustments. Go with the flow and your body will thank you.

    I’ve never made poached eggs before, the process kind of scares me so thanks for the schooling. A big salad loaded with every veggie under the sun always makes me feel better and puts me on the right track.

    PS-What polish shade is that on your fingers? I Love it!!

    The whole poached egg process intimidated me for a long time. But it’s totally worth it to learn because it’s such a clean way to eat eggs – no extra cheese, dairy, or oil necessary.

    This is perfect timing! I was actually thinking about this lately, due to work as well. My favorite way to get back on track is by having a healthy breakfast, oatmeal more often than not with fruit and nuts. If you start your day on the right foot, things are bound to look up. Right? Right! :-)

    I love poached eggs over spinach too! Asparagus (roasted, preferably) and eggs is also another great combination. This is making me hungry :/

    My favorite get-back-on-track-to-health meal has got to be a smoothie packed with spinach and fruit. No matter how icky I’m feeling because of a few days (or weeks) of indulgence, a smoothie always makes me feel great in the morning.

    aw, love this post, you’re so right about not beating ourselves up. i think women in general feel too guilty about the siilliest things sometimes. sometimes we just need to cut ourselves some slack and poach an egg! :)

    Oh my goodness, you are speaking straight to my heart sister! Ok QUESTION: I feel like the scale is currently my enemy. I don’t know why. I’m afraid that if I tuck it away in the linen closet that I will gain weight and have to buy new pants. What is your advice? Take away the scale for a month and see what happens?
