Oatspiel BreadNovember 14, 2011

Here’s the Spiel:

So we’re barely moved into our new home when I begin to get the itch to bake. This is a very harrowing sentiment when one can’t find which box duplicitously claims to house the whisk and which box hides the pans. Please try not to notice that I’m writing as if boxes are somewhat evil in nature. Moving is one of my least favorite tasks in the world (while unpacking boxes is my second least favorite task), and since this site is dedicated to all things positive, I will leave it at that.

In order to seek therapy from all things chaotic, I bake. Well, creating anything from scratch is really how I keep my soul happy and satisfied, be it body butters, blog posts, or in this case, breads. So it’s no surprise that I’ve been blowing it up in my not even totally unpacked kitchen. Here’s the loaf that started it all…

Please excuse the killerscratch. I barely ever write with a pen and paper anymore.

White countertops. Very white countertops.

Best baking trick in the book for making buttermilk: Pour a few teaspoons of vinegar into fresh milk and voila: buttermilk!

yummmmmm

This is a very mild bread recipe that can be doctored up with fruit or kept plain. And since I’m now running a wonderfully demanding business that is its own beast, (and since I couldn’t find the knives to chop up any fruit) the bread was kept plain.

No time for baking flair up in this piece. For now, at least.

Does this work at high altitude??? ;) SO GLAD YOU POSTED! I’ve missed you!

  • missfitbliss

Hey La!!  I’m so happy to be back in the swing of things:))  I doubt this bread would work super well at high altitudes as it is already pretty flat.  It’s very mild and hardly sweet at all – a great utility snack bread for kids.  Could be worth a shot…

Thats a great tip re milk plus vinegar equals buttermilk. I never knew. Anyone know if it will work equally with well with soy? As I am allergic to all things dairy quite important

  • missfitbliss

Hey Eleonora!  You can actually do the same thing with soy milk and accomplish similar results!
